Sterling Crew is an experienced food sector director with an extensive portfolio of Chair and Board roles, including his esteemed positions as President of the Institute of Food Science and Technology (IFST) and Board Trustee for the Chartered Institute of Environmental Health (CIEH). His dedication to enhancing food safety and hygiene standards is exemplified through his fervent support for the Safe to Trade scheme.

Safe to Trade is a groundbreaking initiative aimed at standardizing the collection and auditing of food hygiene and safety data. This innovative scheme was developed to address the inconsistencies in audits and to provide a clear scope for evaluations, thereby reducing the reliance on individual professional judgments in interpreting risk-based legislation. The Safe to Trade standard, which is the first of its kind to interpret legal requirements and best practices specifically for the catering sector, is a significant contribution to the field. It is poised for accreditation to ISO/IEC 17065, with applications pending, and is a key component of the Primary Authority National Inspection Plan.

Sterling Crew’s passion for Safe to Trade is rooted in his unwavering commitment to improving food safety standards and consumer confidence in the catering sector. The scheme not only empowers consumers to make informed dining decisions but also provides Food Business Operators (FBOs) with the tools to demonstrate legal compliance, build a robust due diligence defence, and reduce insurance costs. By enhancing food safety and maintaining high standards, Safe to Trade ultimately aims to reduce the incidence of foodborne diseases (FBD).

Crew’s role in the governance of Safe to Trade’s technical standards is pivotal. His vast experience and expertise in food science and technology enable him to contribute effectively to the development and implementation of these standards. Over 50 Environmental Health Officers (EHOs) are currently conducting Safe to Trade audits, and the scheme is expected to gain global traction as it recruits new Certification Bodies worldwide. This international expansion will not only influence food safety policies in various countries but also contribute to the reduction of FBD on a global scale.
